How To Make Spicy Beef Burritos

We all have those busy weeks when we don’t have the time or the energy to cook dinner. Simple prep-ahead options are the KEY to making mealtime manageable. Don't worry, I’ve got a burrito recipe that will bring the joy back to your family’s dinner table.

Ingredients(For 3 servings)

🔰 3 lb. lean ground beef

🔰 3 (1-ounce) packet taco seasoning mix

🔰 9 cups cooked rice

🔰 4.5 cups refried beans

🔰 18 large (10-inch) flour tortillas

Instructions

Step 1

First of all, preheat the oven to 350°F. Spray a 9x13-inch baking dish with nonstick cooking spray; set aside.

Step 2

Cook the beef with the taco seasoning mix according to the seasoning package instructions.

Step 3

To prepare 1 burrito: spread ¼ cup beans down the center of the tortillas; top with ½ cup rice, beef, 2 tablespoons corn, and ¼ cup cheese.

Step 4

Fold in opposite sides of each tortilla, then roll up, burrito style. Place, seam-sides down, in a prepared dish. Repeat with the remaining ingredients to prepare 6 total burritos.

Step 5

Cover with foil and bake for 25 minutes (until heated through). If you are baking the burritos from the refrigerator while they’re still cold, it will take about 30-35 minutes for them to heat through. Then serve hot and enjoy.

Tips to Success

📢 If you’re freezing the burritos, be sure to skip any watery fillings like tomatoes, bell peppers, or lettuce, which just result in a soggy tortilla.

📢 If you prefer smaller burritos, you can adjust the amount of ingredients that you use. For instance, use less rice or less cheese for a lighter option.

📢 Don’t forget the toppings! These burritos are best served with avocado or guacamole, salsa, and sour cream for dipping, fresh sliced tomatoes, pickled red onions, etc.

The key to a perfect burrito lies in the balance of ingredients and careful wrapping. Start by layering beans first because this creates a sturdy base that prevents the tortilla from tearing. Next, add rice, beef, corn, and cheese, keeping the quantities moderate so each bite contains all the flavors. When rolling, fold in the sides first, then roll tightly from the bottom to ensure the filling stays inside. If you’re making burritos ahead of time, freeze them without watery ingredients like lettuce or tomatoes to avoid soggy tortillas. Another tip is to preheat the tortillas slightly before filling; this makes them more pliable and less likely to break. Small adjustments like this elevate your burrito from good to restaurant-quality.

Serving Ideas and Variations

While these spicy beef burritos are perfect on their own, they’re even better when paired with tasty sides and toppings. Serve with fresh salsa, guacamole, sour cream, or a squeeze of lime to brighten the flavors. You can also add sautéed peppers, onions, or beans for extra nutrition and texture. For a lighter option, swap white rice for brown rice or cauliflower rice and use reduced-fat cheese. Burritos are great for meal prep too — simply assemble, wrap individually, and freeze. When ready to eat, bake until hot, and enjoy a homemade version of a takeout favorite.
