What is Chicken Shawarma?

Shawarma is a popular dish originating from the Middle East. It’s a popular street food that is traditionally made in the form of spiced meats that are stacked on a vertical rotisserie with thin slices shaved off as it rotates. But don’t worry! We can cook our food horizontally in a good old pan or on the BBQ! Shawarma was traditionally made with lamb, mutton, and chicken, though these days you see it with beef too. 

Ingredients

⏺ 24 boneless, skinless chicken thighs

⏺ 3 large onions, thinly sliced

⏺ 2 tbsp ground cumin

⏺ 2 tbsp paprika

⏺ 1 1/2 tsp ground cloves

⏺ 1 1/2 tsp cayenne pepper

⏺ 2 tbsp turmeric powder

⏺ 2 tbsp ground coriander

⏺ 2 tbsp garlic powder

⏺ 3 large lemons, juice of

⏺ 1 cup Private Reserve extra virgin olive oil

Instructions

Step 1:

First of all, in a small bowl, mix the cumin, turmeric, coriander, garlic powder, sweet paprika, and cloves. Set aside the shawarma spice mix for now.

Step 2:

After that, Pat the chicken thighs dry and season with salt on both sides, then thinly slice them into small bite-sized pieces.

Step 3:

Place the chicken in a large bowl. Add the shwarma spices and toss to coat. Add the onions, lemon juice, and olive oil. Toss everything together again.

Step 4:

Now, preheat the oven to 425 degrees F. Spread the marinated chicken with the onions in one layer on a large, lightly oiled baking sheet. Roast for 30 minutes in a 425 degrees F heated oven. For a browner, crispier chicken, move the pan to the top rack and broil very briefly (watch carefully). Remove from the oven.

Step 5:

While the chicken is roasting, prepare the pita pockets. Make tahini sauce according to this recipe. Make a 3-ingredient Mediterranean salad according to this recipe. Set aside.

Step 6:

To serve, open the pita pockets up(if you want, you can use a piece of flatbread as a wrap). Spread a little tahini sauce or Tzatziki sauce, add chicken shawarma, arugula, Mediterranean salad, and pickles or olives, if you like. Serve immediately!
